Honolulu Beerworks, in the heart of Kakaako on Cooke Street, becomes only Honolulu's second commercial beer brewery when it opens. Expect ales and lagers, some aged in these Kentucky bourbon barrels. Expect a big bar running the width of the converted 3,200-sq-ft warehouse space, with picnic table seating both indoors and in the neighboring alley. Expect a brewery with sustainable touches, like recycled wood interiors, natural lighting and some of its mash going into its own breads. Expect sandwiches and dishes incorporating beer. And with luck, says owner Geoff Seideman, who was assistant brewmaster at Aloha Beer, expect Honolulu Beerworks to be open for February's Night Market. — Mari Taketa
