If Bevy had a slogan, perhaps it should be, "Would you like to try something different?" Sitting down at the bar, I realized that a lot of my taste in the world of liquor, and also much of my education on the art of the cocktail I owe to Self, whose career has included working with Las Vegas-based bar consultant company BarMagic and managing the bars at EDITION Waikiki and thirtyninehotel.
Over the last five years, I've learned that whatever drink this man puts in front of me, whether I order it specifically or just walk in and say, “I'd like a drink, please; just give me something,” will probably be amazing, a level of trust I reserve for only a few bartenders in this town. And now, given free rein to do things his way, in his own bar, it's highly probable that even more amazing things will occur.
