KCC students ready for Ho’okipa

Ed Morita pays a visit to his old culinary school to get a peek at what students are preparing for the annual gala


The culinary program at Kapiolani Community College was in full production Thursday, as faculty and students prepared for Friday’s annual Ho’okipa fundraising gala at the Royal Hawaiian Hotel.

As an alumni of the program, I remember all the work that went into preparing for this marquee event. I decided to visit my old stomping grounds to see what the instructors and students were working on for this year’s fundraiser.

At chefs Mark Okumura and Dave Brown’s patisserie class, students were busy making showpieces, chocolate candies and other parts of their multi-component dessert. Here’s a sneak peek of some of the sweets that will be available.

this is a different kind of food porn. totally loved the shots, the behind-the-scenes and how-to aspects, and the intense concentration on the students' faces
